Healthy Recipe of the Month

 

Date Walnut Bars
A healthy, no guilt dessert!

Nonstick cooking spray
3/4 cup whole-wheat flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1 large egg
1/4 cup honey
2 Tbsp. canola oil
1/2 tsp. grated orange peel
3 Tbsp. applesauce
2/3 cup chopped pitted dates
1/3 cup chopped walnuts

Preheat oven to 350°F. Spray 8” baking pan with cooking spray. In a large bowl, mix all dry ingredients together. In a small bowl, mix egg, honey, oil, orange peel, and applesauce. Stir egg mixture into dry ingredients until blended. Stir in dates and walnuts. Spread into prepared pan. Bake until toothpick inserted in center comes out clean – about 25 minutes. Cool and cut into 16 squares. 

Serves 16. Per serving: 91 calories, 4 g fat, 14 g carbohydrate, 2 g protein, 1 g fiber, and 58 mg sodium.
