Grilled
Pork Soft Tacos
This recipe serves: 4
Preparation time: 15 minutes
Cooking time: 15 minutes
Ingredients:
1 cup canned, crushed pineapple
1/2 cup diced red bell pepper
1/2 teaspoon minced jalapeņo pepper, or to taste
1 pork tenderloin, about 1 pound
1 tablespoon olive oil
2 cloves minced garlic
1 teaspoon dried oregano
8 soft flour tortillas
1/4 cup salsa
Cooking Instructions:
1. Combine the pineapple, red pepper and jalapeņo pepper in a small bowl and set aside.
2. Preheat the grill or broiler to medium-high. Rub the pork tenderloin with the olive oil, garlic and oregano.
3. Grill or broil the pork for 6 to 8 minutes on each side or until it is just cooked through. Turn off the heat, set the pork aside and keep warm.
4. Wrap the tortillas in foil and warm them with the residual heat
from the grill or broiler.
5. While the tortillas are warming, slice the pork on the bias.
6. Fill the tortillas with sliced pork, the pineapple mixture and salsa.
