Red, Green, and NutritiousBeets are rich in
the B vitamin folate, which is essential for cell growth, especially during
pregnancy. One cup of cooked, sliced beets has 136 micrograms of folate. The
daily requirement is 400 micrograms (800 micrograms during pregnancy). The
greens attached to beets are also rich in nutrients and can be prepared like
spinach or Swiss chard for a delicious side dish.
